As summer approaches, the days get longer, the temperature rises, and we find ourselves craving lighter dishes that don’t force us to give up flavor and nutrition. Seasonal fruits tempt us with their sweet smell and fresh flavor. With these savory and sweet recipes, your summer diet will be more varied and interesting.
You can make this salad of pineapple and avocado on a day when you’ve got the grill fired up for a cook-out. Peel one pineapple and cut it into rings; then, cut those in half. Grill them on both sides on a hot grill. Boil two ears of corn (or grill them) and then remove the corn from the ears. Chop two purple onions and cut two avocados in half, removing the flesh with a spoon and cutting it into slices. Mix the grains of corn with the chopped onion along with the juice of two limes, cilantro to taste, olive oil and salt and pepper. Serve over the grilled pineapple and decorate with the avocado slices.
This is a salad that’s a lifesaver when the heat is on. It yields four servings. Place one green apple and one red apple, cut into thin slices, on a bed of greens, along with pieces of 1 clementine or orange, 1/2 cup of dried cranberries, a 1/2 cup of walnut halves, and 1 avocado, cubed (we explain how to do that here). Dress with salt and balsamic vinegar to taste.
Another delicious, nutritious salad is one that’s made with smoked salmon, avocado and mango. Cut 2 avocados into cubes. Peel 2 tomatoes, remove the seeds, and cut them into cubes. Peel one mango, remove the seed, and dice the fruit so that it’s the same size as the other ingredients. Mix these ingredients in a bowl and add 50 g. of black olives, roughly chopped, and parsley to taste. Dress with a vinaigrette made of 3 parts olive oil and 2 parts vinegar, with a dash of salt. Serve on individual plates with a fillet of smoked salmon.
And you can’t skip dessert as the crowning glory of a delicious meal. Make a light syrup with 1 cup of water and 1/2 cup of sugar. When it achieves the desired consistency, remove it from the heat, add 1 teaspoon of grated ginger, and allow it to cool. Cut 2 avocados in half and remove the flesh without damaging the avocado shells. Cut the flesh into cubes. Peel and cut 2 kiwis and do the same with 1 banana. Cut 2 oranges. Mix everything and fill the avocado shells. Before serving, drizzle the cold syrup on top.
