Spring Break is getting closer every day, and whether you plan to take some time for yourself or spend time with friends, this vacation can be an excellent opportunity to try new meals with delicious avocados. Avocados fit into a variety of healthy eating patterns set by the Dietary Guidelines for Americans and can be easily incorporated into an overall healthy diet.
Before making any change to your diet, you should always consult your doctor. Ask him/her about how you can include new meals full of the green goodness of avocados in your weekly routine.
Once you get the green light, start adding new flavors and meals to your diet with these two recipes from Avocados From Mexico.
This recipe with Buffalo-style sauce gives a spicy flavor to this wrap that also contains a large variety of vegetables.
1 Avocado From Mexico; 1 lb cooked, boneless, skinless chicken breast; 1/2c hot sauce; 2T lemon juice; 1t paprika; 1t garlic powder; 1/2t onion powder; 1/2c shredded carrots; 1c broccoli florets, finely chopped; 1/4c nonfat, plain Greek yogurt; 4 six-inch, whole-grain tortillas.
In a medium bowl, shred chicken using two forks. In a small bowl, combine hot sauce, 1T lemon juice, paprika, garlic powder, and onion powder. Add the hot sauce mixture to the chicken and mix well. In another small bowl, mash avocado, yogurt, and remaining lemon juice. To assemble the wrap, spread the avocado mixture on each tortilla. Add carrots, broccoli, and buffalo chicken before rolling.
If you want, you can substitute the whole-grain tortillas for lettuce leaves.
1 Avocado From Mexico, sliced; 2 to 4 slices of wheat bread; 1t vegetable oil; 6 scallions, sliced (only the white and green part); 1 jalapeño pepper, minced; 1t sesame seeds; 1T of lime juice; kosher or marine salt to season.
Heat the oil in a pan over medium heat. Once it is hot, add the scallions and jalapeño and cook for a couple of minutes until they are completely cooked. Sprinkle the sesame seeds in the pan and cook for 1 more minute until they are toasted. Add the lime juice and salt to taste. Turn off the heat and place 3 or 4 slices of avocado over each slice of bread and mash softly with a fork. Garnish with the scallions, sesame seeds, and jalapeño.
