Three King’s day is a special day for children, but adults can also spoil themselves a bit too. It is nearly impossible to resist having the traditional Rosca de Reyes, since most people look forward to enjoying at least one slice.
Set the stage before cutting la Rosca de Reyes with some delicious snacks for the occasion featuring Avocados from Mexico.
Avocado Stuffed Mushroom with Spinach
20 Crimini mushrooms, washed
1 teaspoon extra virgin olive oil
1 tablespoon minced garlic
1 small minced shallot
10oz spinach, thawed and drained
1 ripe Avocado from Mexico
2 teaspoons of lime juice
Salt and pepper (to taste)
2 tablespoons of almonds or cilantro leaves (optional)
1. Preheat the oven to 425°
2. Softly remove the stems from the mushrooms and set them aside. Place the head of the mushrooms on a baking sheet and bake for 15-20 minutes.
3. While the mushrooms are in the oven, mix the stems with the garlic, shallots, and salt. Add the spinach and cook on the stove top for 5 minutes. Remove from the heat and let it cool for a couple of minutes.
4. Remove the mushrooms from the oven and let them cool for 10 minutes.
5. For the stuffing: Crush the avocado in a bowl. Combine with the cool spinach and mix well. Season – to taste. Carefully stuff the head of each mushroom. Decorate with 1 slice of almond or a leaf of cilantro

Indonesian Milkshake with Avocado and Coffee
1/2 Avocado from Mexico, peeled and pitted
1 tablespoon of coffee (or 1/3 tablespoon espresso with 2/3 tablespoons cold water)
1/2 tablespoon condensed milk
2 tablespoons of ice
Mix all the ingredients in a blender, until you have a smooth mix. Serve immediately (best served with chocolate drizzle).
