An ideal beverage for those who enjoy smoothies, this green goody can be prepared quickly. Simplyblend ½ Avocado from Mexico with 2 cups of minced cabbage, 1 ½ cups of apple cider, 2 teaspoons of ginger, and ¼ cup of lime juice until smooth.

Vegan Coquito

For an afternoon or evening boost of nutrition, try this adult beverage.

  • 1 Avocado from Mexico peeled, with no seed and mashed
  • 5 cups of coconut milk
  • 2 cloves
  • 1 cinnamon stick
  • 1 teaspoon of vanilla extract
  • ½ teaspoon of baking soda
  • 1 cup of sugar
  • 6 egg yolks
  • 6 oz of coconut rum or tequila

Preparation:

In a pot, mix coconut milk, cloves, cinnamon, vanilla extract and baking soda over medium heat until boiling. Lower the heat and cook stirring occasionally for 15 minutes. Use a strainer to separate the liquid from the spice sticks and leaves.

In another bowl, mix the egg yolks with sugar until thick. Add the yolks to the coconut milk mixture and combine with a fork. Put the mixture in a pot on low heat for 12-15 minutes stirring occasionally. Remove from the heat. Let it cool and mix in the blender with 1 mashed Avocado from Mexico and rum. Make a purée out of the ingredients. Serve warm over ice.
