Stay Warm with an Avocado-Topped Breakfast Scramble

This green fruit not only tastes good, but provides 6% good fats, 11% of the daily fiber needed, and they are a source for nearly 20 vitamins and minerals in a one-third serving of a medium avocado (50g).

Here’s a recipe to get you out of bed in the morning and energized until lunch. This black bean, mushroom and avocado scramble includes nutrient-dense avocado with your diet to keep you satisfied thanks to it being a good source of fiber.

Preparation:
To start, heat 1 tablespoon of butter in a pan at medium heat. Once melted, add ¼ cup of diced onion and stir until golden brown. Add 1 cup of diced mushrooms and sauté until soft and brown (5 to 10 minutes). Add 1 garlic clove finely chopped and cook another minute.

Beat 2 eggs in a bowl with a drizzle of milk; pour the mix in the pan with the onion, the garlic and the mushrooms. Add ¼ cup of black beans andstir until eggs are cooked to taste. Put the eggs on a plate and top with a diced Avocado from Mexico. Sprinkle with chopped cilantro and salt and pepper to taste. Then dig in and stay energized.
