Brown Rice with Avocado

Avocados and rice are very versatile and perfect to play around with in the kitchen.

INGREDIENTS

  • 100 grams brown rice (preferably long grain)
  • 1 Avocado From Mexico
  • The juice of one lemon
  • 100 grams yellow raisins
  • 50 grams dried peach
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 15 grams sesame seeds
  • 10 grams sunflower seeds
  • 15 grams dehydrated onion

PREPARATION
  • Heat 2 cups of water in a deep pot and add some salt.
  • Then add the rice and let it boil until soft.
  • Once it’s cooked, drain the rice with cold water to stop the cooking process.
  • Drain again. Peel the avocado and cut it into small squares.
  • Add a few drops of lemon on the cubed avocado and set aside.
  • Cut the dried peaches into slices.
  • In a bowl, add the raisins, the sunflower and sesame seeds, the dried peach, and onion.
  • Then add the rice and avocado, mix it.
  • Season with oil, salt, and apple cider vinegar.
  • Serve chilled or at room temperature.
