- 1/3 cup canola oil
- 2 tablespoons white wine vinegar
- 2 tablespoons lemon juice
- 1 tablespoon chopped shallot (1 small
- 1/4 cup chopped cilantro
- 1 pinch of cilantro seed (coriander)
- 1 pinch of cumin
- 1 package of 6 ounces of butter lettuce
- 1 medium cucumber
- 1 cup diced fresh pineapple
- 1 cup diced Avocado From Mexico
- 1/2 cup whole fresh cilantro leaves
For the dressing:
- In a medium bowl, mix the first 7 ingredients with a whisk. In a large bowl combine the remaining ingredients.
- Add the dressing and stir well. serve the salad divided on 4 plates.
Recommendation: Add chicken or grilled meat or any protein of your choice to this salad.
