Chicken Flautas With Avocado Salsa

INGREDIENTS

  • 3 chicken breasts
  • ½ onion
  • 1 bay leaf
  • 1 tablespoon of chicken broth
  • 16 corn tortillas
  • Salt and pepper to taste
  • Oil for frying

FOR THE SAUCE

  • 2 Avocados From Mexico
  • ½ cup sour sauce
  • Juice of ½ lemon
  • 2 tablespoons cilantro
  • 3 tablespoons of olive oil
  • Salt and pepper to taste

PREPARATION
  • In a pot with water, cook the chicken with the onion, bay leaf and chicken broth. Allow to cook for 15 to 20 minutes.
  • When the chicken is ready, shred with two forks and reserve.
  • In a blender, add the sauce ingredients and blend. Add more oil if necessary.
  • On each tortilla place a little bit of the chicken, roll them, and secure with a toothpick. In a pan with hot oil, fry the flutas until they are golden brown.
  • Serves the flautas with avocado sauce.
