INGREDIENTS

  • 1 teaspoon olive oil
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon chipotle chile powder
  • 1/4 teaspoon black pepper
  • 1 pound top sirloin steak
  • 16 ripe Avocados From Mexico cubes
  • 3 yellow or orange bell peppers, seeded and cut in 1-inch pieces
  • 16 cherry tomatoes
  • 16 (1-inch) squares red onion
  • 8 (8-inch) skewers
  • Cooking spray
  • 1/4 teaspoon kosher salt

PREPARATION
  • Combine olive oil, 1/4 teaspoon kosher salt, chipotle chile powder, and black pepper
  • Rub evenly over top sirloin
  • Cut steak into 32 cubes
  • Thread steak, avocado, cherry tomatoes, bell peppers, and onion alternately onto skewers
  • Coat with cooking spray
  • Sprinkle with 1/4 teaspoon kosher salt
  • Place skewers on a grill rack coated with cooking spray
  • Grill 5 minutes or until done, turning skewers occasionally for an even char
